Flavor Development and Quality Using e-Nose / e-Tongue Technology

Just how helpful is ENT technology as an alternative to animal sensory palatability tests? AFB International researchers demonstrate on liquid and dry pet food flavors.

To demonstrate how ENT can be used as a screening tool in pet food flavor development and for evaluating the quality of finished pet food flavors, AFB used ENT to analyze a series of liquid and dry pet food flavors. This required separate analyses using the e-nose and e-tongue technologies, then combining them to approximate how animals perceive using both taste and smell. Among the insights shared in this summary presentation:

• Minimal samples are required for analysis
• Combined ENT can provide useful information about the complex sensory profile of pet foods and flavors
• The pet food flavor development cycle can be shortened by using ENT
